The Art of Preserving Elephant Garlic
Fresh Elephant Garlic is renowned for its naturally mild, sweet, and buttery taste. At Eco Bini, we meticulously preserve these exquisite qualities
We start by carefully slicing hand-selected bulbs and then gently low-temperature drying them. This process locks in their distinctive flavour, health benefits and aroma, ensuring a gourmet ingredient ready for your culinary inspiration. Unlike many commercially produced garlic flakes, which undergo harsh high-heat processing, our small-batch drying method respects the natural characteristics of Elephant Garlic. This results in a shelf-stable product that offers exceptional versatility in the kitchen. Whether you choose to rehydrate them for cooking, add them directly to soups and stews, or grind them into fresh garlic flakes or powder, these large slices are a game-changer.

The Anatomy of a Premium Allium
Every premium Elephant Garlic bulb undergoes a rigorous selection process. Each bulb is hand-selected, carefully peeled, and then precision-sliced before entering a controlled low-temperature drying cycle. This gentle dehydration process is key to preserving the garlic’s naturally sweet flavour, delicate aroma, and beautiful ivory colour. The result is crisp slices with an exceptionally long shelf life. When you need them, these slices rehydrate rapidly, returning to a soft, buttery texture that is ideal for both everyday cooking and sophisticated gourmet creations.

How to Cook with Dehydrated Elephant Garlic
One of the most significant advantages of using dried Elephant Garlic is its remarkable versatility. You can prepare it in several ways to suit your cooking needs:
Rehydrate:
Simply soak the required slices in warm water for 10–20 minutes. Once rehydrated, you can use them exactly as you would fresh Elephant Garlic.
Tip: Do not discard the soaking liquid. It makes an excellent flavour base for soups, sauces, and gravies, adding a subtle garlic essence.
Cook Directly:
For slow-cooked dishes, there’s no need to rehydrate the slices beforehand. Simply add them directly to your cooking pot for dishes like:
- Soups
- Stews
- Casseroles
- Curries
- Pasta sauces
The slices will naturally soften and meld into the dish during the cooking process, releasing their flavour gradually.
Grind Fresh:
The dried slices can easily be transformed into different forms using a spice grinder or a mortar and pestle. This allows you to create:
- Garlic flakes
- Garlic powder
- Garlic salt
- Herb and garlic seasoning blends

Prep Time: 10 mins
Chill Time: 1 hour
Ingredients
- 4–5 Dried Elephant Garlic Slices (rehydrated and finely chopped)
- 250 g salted butter, softened
- 1 tbsp fresh parsley, finely chopped
- Cracked black pepper, to taste
- Sea salt, to taste

Method:

- Refrigerate the compound butter log for at least 1 hour, or until firm.
- Serve generous slices of the compound butter over hot steak, lamb chops, baked potatoes, or warm garlic bread.
2. Classic Elephant Garlic Aglio e Olio
This is a rapid, elegant Italian classic, re-engineered with an Overstrand twist. The dried garlic slices serve as both a flavour foundation and a crispy textural garnish.
Prep Time: 5 mins | Cook Time: 12 mins | Servings: 2
Ingredients:
- 200g Spaghetti or Linguine
- 60ml Extra Virgin Olive Oil
- 6–8 Elephant Garlic Slices (approx. 6g – 8g, left whole)
- 1/2 tsp Dried chili flakes
- Freshly grated Parmesan cheese and parleys to finish

Method:
1. Cook the spaghetti or linguine according to package directions until al dente. Reserve about a cup of the pasta water before draining.
2. While the pasta is cooking, gently warm the extra virgin olive oil in a large skillet over medium-low heat.
3. Add the whole dried elephant garlic slices to the warm oil. Allow them to infuse and gently sizzle for several minutes until they are lightly golden and fragrant. Be careful not to burn them.
4. Stir in the dried chili flakes and cook for another 30 seconds.
5. Add the drained pasta to the skillet with the garlic-infused oil. Toss well to coat the pasta.
6. Add a splash of the reserved pasta water to help create a light sauce. Toss again.
7. Serve immediately, finished with freshly grated Parmesan cheese and chopped parsley.
3. Creamy Elephant Garlic Mash
Transform ordinary mashed potatoes into a luxurious side dish with the subtle, sweet flavour of Elephant Garlic.
Prep Time: 10 mins | Cook Time: 20 mins
Ingredients:
- 1kg Floury potatoes (peeled and quartered)
- 6-8 Elephant Garlic Slices (approx.6g – 8g)
- 80ml Warm heavy cream or milk
- 50g Salted butter
- Salt and freshly ground black pepper, to taste
- 2 finely crushed dried slices, for garnish (optional)

Method:
1. Place the quartered potatoes into a large pot and cover with cold salted water.
2. Drop 4-6 whole Elephant Garlic Slices directly into the water with the potatoes.
3. Bring the water to a boil, then reduce the heat and simmer until the potatoes are fork-tender, about 15-20 minutes. The garlic slices will rehydrate and soften alongside the potatoes, infusing the cooking water with their flavour.
4. Drain the potatoes and garlic thoroughly.
5. Mash the potatoes and the softened garlic together until velvety smooth. You can use a potato masher, ricer, or food mill for the best texture.
6. Stir in the warm cream (or milk) and salted butter until fully incorporated and the mash is creamy.
7. Season with salt and freshly ground black pepper to taste.
8. For an added delicate garlic finish and subtle texture, sprinkle two finely crushed dried Elephant Garlic slices over the finished mash just before serving.
4. Elephant Garlic Confit
This recipe demonstrates the incredible versatility of our dried garlic slices. Confit, derived from the French tradition of slow-cooking food in fat, allows simple ingredients to be preserved and transformed. In the case of garlic confit, peeled cloves are gently simmered in olive oil until exquisitely soft, sweet, and lightly golden.
Prep Time: 10 minutes
Cook Time: 45–60 minutes
Ingredients:
1 cup Dried Elephant Garlic Slices
Approx. 2 cups Good quality olive oil (enough to generously cover the garlic)
2 sprigs Fresh thyme (optional)
1 sprig Fresh rosemary (optional)

Method:
1. Rehydrate the dried elephant garlic slices by soaking them in warm water for about 15 minutes. Drain them well.
2. Place the rehydrated garlic slices into a small, oven-safe pot or a small saucepan.
3. Pour enough good quality olive oil over the garlic slices to cover them completely.
4. Add the fresh thyme and rosemary sprigs, if using.
5. Cook very gently over a low heat on the stovetop, or in a low oven (around 90–100°C or 200–210°F), for 45–60 minutes. The goal is to slowly infuse the oil and soften the garlic without browning or frying it. The garlic should be soft and spreadable.
6. Once cooked, remove from heat and let cool slightly.
7. The result is two wonderful products:
Garlic Confit: The soft, sweet, spreadable garlic cloves.
Garlic-Infused Olive Oil: The flavourful oil used for cooking or as a finishing oil.
Store both the confit garlic and the infused oil in airtight containers in the refrigerator. The confit garlic should be used within a couple of weeks.
