Unlike commercially produced garlic flakes that are often processed under high heat, our small-batch drying process preserves the natural characteristics of Elephant Garlic while creating a shelf-stable gourmet ingredient ready whenever inspiration strikes.

The Anatomy of a Premium Allium
Every premium Elephant Garlic bulb is hand-selected, carefully peeled and precision sliced before entering a controlled low-temperature drying cycle.
This gentle dehydration process preserves the garlic’s naturally sweet flavour, delicate aroma and beautiful ivory colour while producing crisp slices with an exceptionally long shelf life.
When required, the slices rapidly rehydrate, returning to a soft, buttery texture ideal for everyday cooking or gourmet creations.
🍳 How to cook with Dehydrated Elephant Garlic
One of the greatest advantages of dried Elephant Garlic is its versatility.
Rehydrate
Simply soak the required slices in warm water for 10–20 minutes before using exactly as you would fresh Elephant Garlic.
💡 Don’t discard the soaking liquid—it makes an excellent flavour base for soups, sauces and gravies.
Cook Directly
For slow-cooked dishes there’s no need to rehydrate.
Simply add the slices directly to:
- Soups
- Stews
- Casseroles
- Curries
- Pasta sauces
where they naturally soften during cooking.
Grind Fresh
Using a spice grinder or mortar and pestle, the dried slices can easily be transformed into:
- Garlic flakes
- Garlic powder
- Garlic salt
- Herb seasoning blends
🥩 1. The Ultimate Overberg Braai Compound Butter
The perfect Umami, melting topper for premium rumps, sirloins, lamb chops or Garlic Bread.
Prep Time: 10 mins | Chill Time: 1 hour
Ingredients
- 4–5 Dried Elephant Garlic Slices (rehydrated and finely chopped)
- 250 g salted butter
- 1 tbsp fresh parsley
- cracked black pepper
- sea salt

Method:
- Rehydrate the garlic slices in warm water for 15 minutes before finely chopping.
- Fold through the softened butter together with the herbs and seasoning.
- Roll into a log and refrigerate until firm.
- Serve generous slices over hot steak, lamb chops, baked potatoes or warm garlic bread.
🍝 2. Classic Elephant Garlic Aglio e Olio
A rapid, elegant Italian classic re-engineered with an Overstrand twist. The garlic slices act both as a flavor foundation and a crispy textural garnish.

Prep Time: 5 mins | Cook Time: 12 mins | Servings: 2
Ingredients:
- 200g Spaghetti or Linguine
- 60ml Extra Virgin Olive Oil
- 6–8 Elephant Garlic Slices (approx. 6g – 8g, left whole)
- 1/2 tsp Dried chili flakes
- Freshly grated Parmesan cheese and parleys to finish
Method:
- Warm the olive oil gently.
- Add the rehydrated garlic.
- Allow it to infuse for several minutes.
- Add chilli flakes.
- Toss through the pasta with a splash of pasta water.
- Finish with parsley and Parmesan.
🥔 3. Creamy Elephant Garlic Mash
Transform ordinary mashed potatoes into a luxurious, side dish.
Prep Time: 10 mins | Cook Time: 20 mins
Ingredients:
- 1kg Floury potatoes (peeled and quartered)
- 6-8 Elephant Garlic Slices (approx.6g – 8g)
- 80ml Warm heavy cream or milk
- 50g Salted butter

- Method:
- Place the quartered potatoes into a pot of cold salted water. Drop 4-6 whole Elephant Garlic Slices directly into the water with them.
- Bring to a boil and cook until the potatoes are fork-tender. The garlic slices will completely rehydrate and soften alongside the potatoes, absorbing into the water.
- Drain thoroughly. Mash the potatoes and softened garlic together until velvety smooth.
- Stir in the warm cream and butter.
- Reserve two finely crushed dried slices and sprinkle over the finished mash immediately before serving for a delicate garlic finish and subtle texture.
🫒 4. Elephant Garlic Confit
This has become my as it shows how versatile the slices are. Confit (pronounced kon-FEE) comes from the French tradition of slow-cooking food in fat, allowing it to both preserve and transform simple ingredients. In the case of garlic confit, peeled cloves are gently simmered in olive oil until exquisitely soft, sweet, and lightly golden.
Rehydrate.
Cover with good olive oil.
Add thyme and rosemary.
Cook very gently at about 90–100°C for 45–60 minutes until the garlic is soft and spreadable.
The bonus is that you end up with:
- Garlic confit
- Garlic-infused olive oil
from the same recipe.
