Shiitake is a “Slow and Steady” grower compared to Oysters. At the Sustainability Testing Station, we’ve selected this strain for its reliable performance on Supplemented Hardwood Sawdust.

The Browning (Popcorning) Phase: Unlike other mushrooms, Shiitake needs to “brown” or “cure” before it will fruit. Our strain is selected for a vigorous maturation phase, where the white mycelium turns into a protective, bumpy brown “bark.”

The Cold Shock: Once the block is brown and firm, a “cold shock” (placing the block in a cold room or soaking it in ice-cold water) triggers a massive flush of thick, “donkey-ear” caps.

Top & Side Fruiting: This strain is versatile. Once the plastic bag is completely removed from the matured “log,” the mushrooms will fruit from every available surface.
